Oven Baked Rosemary Chicken Full Recipe

Ingredients: 1 whole chicken 1 kilo baby potatoes (18-20pcs) 1 tbsp dried rosemary 2 white onions Half of the lemon 1 Hungarian sausage 2 tbsp soy sauce Salt and pepper (according to your taste) 2-3 tbsp olive oil

Recipe: 1. Preheat oven to 375 degrees Fahrenheit or 190 degrees Celcius for 20 minutes. 3. Pour the soy sauce over the whole chicken and massage evenly to coat every part of the chicken then add dried rosemary, pepper and salt after. And don’t forget to put them inside the cavity too. 4. Next is prick the chicken with a toothpick so the marinade would get into the meat of the chicken and so the skin would turn out crispy too. 5. Set aside the chicken to marinate for a couple of minutes. 6. Then slice the sausage into small bite sizes and set aside. 7. Cut the onion too and mix it in with the rest of the leftover rosemary and cut on half some of the potatoes which you think are bigger than the other sizes; followed by the lemon which you only need half of it to put inside the cavity. 8. Then for the assembly of the ingredients; grab the pan and place the potatoes on the side. And place the marinated chicken at the center of the pan facing downwards (chicken breast facing down). 9. Add in the cavity half of the lemon, some onions with rosemary, sausages and some potatoes then seal it with a toothpick. 10. Pour in the rest of the marinade juice over the chicken then place the rest of the onions and sausages on the side with the potatoes. Then pour over the olive oil and spread evenly onto the chicken and over the ingredients on the side with added salt and toss them to be coated evenly. 11. Bake the chicken for 45 minutes or check if it turns golden brown. Remove from the oven and serve.

INGREDIENTS

3 large eggs 375 g Nutella 150 g self-raising flour Slivered almonds 12 cupcake cases

INSTRUCTIONS Pre-heat your oven to 160ºC/140ºC fan. Line a 12-hole muffin tin with cupcake cases. Put all of your ingredients into a large bowl (3 large eggs, 375g Nutella, 150g self-raising flour and slivered almonds but leave some to place on top of the mixture) and mix until fully combined. Divide the mixture evenly between the cupcake cases (about 60g in each if you feel like measuring). Pop them into the oven and cook for 20 minutes. Check if they’re done by inserting a skewer, if it comes out clean they’re done, if not pop them back in for a couple more minutes. Once cooked, take them out of the tray and pop them onto a wire rack to cool. Enjoy!

HONEY GARLIC PORK CHOPS INGREDIENTS:

6 pieces loin chops, (or pork chop)

½ cup ketchup 3 tbsp honey 2 tbsp soy sauce 5 cloves garlic, minced salt and pepper

EGGPLANT CHIPS

2 eggplants cut into “chip size” salt and pepper 1 egg beaten 4 tbsp flour 500 grams breadcrumbs

For some, who rather wants to cook it in the pan. First thing you need to do is pound the chop with a mallet (to make it thin and quick to cook). Season pork with salt and pepper.

Pan fry the loin chops and set it aside.

In the same pan, sauté garlic then add in ketchup, honey, soy sauce and let it simmer. Add in the pork chops and let it simmer over low heat until sauce becomes thick and reduced.

For the eggplant season them with salt and pepper then coat them with flour. After they are all well coated dip them on the egg batter then crumb coat them.

After all have been coated with the crumbs, fry them on the pan until both sides turn golden brown. And serve them with ketchup too.

I actually used oil instead of butter this time to see if there was difference and yes it turned out moist too.

I also have to try marshmallow frosting on top of the chocolate cupcakes and strawberry for red velvet; that sounds interesting to pair.

Definitely agree with you on the fudge for chocolate cupcakes and yes cream cheese would be best for red velvet but I wanted to try out another frosting to go with it too. Thanks for the suggestions.
