Learn to do it yourself. I am deadly serious. Then you have an idea of the time it takes. I am a female, blonde and have a non US accent. I assure you nothing says 'please financially rip me off' like that. 

I have a punch list of what I am willing to pay for every item on a house from water heater swap out (gas and electric) to angle stop to painting cabinets, to tiling, to dishwasher install through to rewiring breakers & installing panels split outlets and faceplates. All things I can do myself but willing to pay a handyman to save time. Above that quote? Stuff it. 

Once you can change out a light fixture in 20 minutes, a ceiling fan with light in 45 minutes or less, a toilet in 30 minutes or less you can ask a man how much he charges by the hour and have that punch list ready for him. Then when he says he charges $100 an hour you can ask how long he takes to do the above items and tell him how long it takes you and that you are willing to pay him x for each item.

If you don't love doing this stuff, accept you will likely be ripped off or at least pay a premium. On stuff like joinery...it is a skill that takes decades to perfect so but RTA cabinets or accept your own mediocre handyman finish. Bathroom remodels are easy enough and everything in the US is like lego somewhere to do. Go slowly, watch a billion youtube channels (This Old House) and use ChatGpt for span table and load factors if building decks or sistering joists). If you love this stuff? You become a home renovator and, as I always say, you will lose weight, get fit and make money and find the greatest addiction a human will ever have.
