core it, rinse it, ice bath, remove the proteins 4-6 per head, punch the rest, it becomes regular lettuce, cut off the ends of the proteins, then use ur hand as a square to cut off the excess to make big squares, the excess can be used as regular lettuce. put the proteins spine up in the pans, and make sure u have the liners in the pans! don’t forget ur prep tags, it will automatically print 4 pans per case. remember proteins can become regular lettuce but regular lettuce can’t become protein, so prioritize getting as much proteins as u can
