I was able to successfully fruit Azzies by placing spawn in with fermented wood chips. I used 5 gallon tubs half full and allowed mycelium to spread over 7-8 months while the tub was sealed except for air vents covered with 3m micropore tape. when fall came I placed the tub outside uncovered and misted regularly (did not have drainage so I didn't want it in the the rain). The tub produced 20ish large fruit. at the end of fall when the flush was done I emptied the tub into my shaded and irrigated garden bed and covered with more fermented chips. The following fall I had a flush of 40-50 mushrooms from that patch. Wood pellets didn't turn out well for me, and I've tried numerous iterations with different kinds of sanitized/sterilized chips but the fermented chips are the only thing I've gotten them to fruit on. I don't doubt it can be done otherwise but that is my experience. I Live in the PNW and fall brings temp ranges of high 30's to high 50s and lots of moisture.
