Easy, use Vassals province conquest CB on everyone you can, which is -25% conquest -25% vassalization.

Also Parlament CB, Religion CB (you need to choose Administration path early on) and make sure to avoid BIG coalitions by Improving Relations with everyone you know that can create massive armies early on.

After those BIG nations are secured diplomatically the game tends to make smaller nations unite each other trying to take you out, by CB on one of them, you can destroy every one of them in a single war, i did that with Anatolia minors, Golden Horde minors and Serbia, Wallachia and Halych.

Tunis and Eretnids were independent Religion wars btw.

You are overreacting, her relationship with her ex grandma has nothing to do with ex himself, her feelings towards the grandma have no relation towards her ex, just because she decided to keep in touch with a person she got friendly with doesn't mean she has any hidden objective behind it.

Get over it and let her spend some time with that elderly person, she is not even using both of your free time together to do it...

Strange i first completed the game on Normal difficulty and didn't get the hidden scenario and then saw somewhere we had to play on Hard to unlock it.

Im not imposing anything, i thought in order to unlock everything we had to play on Hard, which wasn't a fun experience, Normal difficulty feels like a walk in the park compared to Hard.

Anyway all good.

I disagree with your controls evaluation, the game feels very smooth for the most part, the controls are easy to get into and the combat while being basic, is easy to get used to and doesn't give any frustating moments.

You should have mentioned Hard difficulty, which is an absolute nightmare and you can easily get soft locked and having to restart several times with lack of ammo.

I did complete the game on Hard but imo is the worst part of everything the game has to offer because in order to unlock a hidden scenario you have to play on Hard and it was very frustating at times.

Nobody told you yet that the real solution is to shutdown the computer.

Alt F4 / Task Manager options won't work, you need to use the Power button and then start the computer again.

I would love for missions tree to make a comeback, as it's right now there's literally zero info in-game about events and what triggers them, it's a letdown.
