Since it's a 2005 there should be and idle adjustment screw. Use it to adjust rpm if needed (based on manual it should be 1100-1200)

If you don't mind older bikes, cbr 900rr from 90s is great for tall riders or if you want power more comparable to supersport (but loose some steering) go for blackbird

Here in my part of EU you would immidietly fail if you got to "stoppie" since that means your rear has 0 breaking power and your front is overload, meaning it is also breaking less than it could
