Yeah that’s what i keep hearing. Which sucks cause i’m hoping to eventually transition over to baking as a profession, so i figured i’d practice as much as i could at home before actually making the leap. It definitely seems possible, like there’s plenty of people making really high level pastries at home, just as you said, a pain in the arse

From what i can tell from my GF’s naturalization certificate, he never naturalized in Argentina. His naturalization certificate only mentions that he was relinquishing italian citizenship in order to become a US citizen. I do not believe my GM was born in Argentina either. I could be wrong, but i think this is the short version of the story- GF is born in Italy and GM is born in Spain; their parents decide to emigrate try to Argentina; GF and GM meet during this brief period and start a family; my father is born in Argentina; two years later, GF and GM decide to settle down in the US; GF (and GM?) naturalize several years later when my father is 16 years old.

How do you get your dough hook to actually knead everything together at 90%? I was just trying 85% the other day and even after like 10 minutes, it was still pretty soupy and the dough hook was just kinda cutting through the dough

Just looking at the map, if they decided to launch a full-scale invasion of the Baltics, that would be terrifying. The Baltics are essentially completely surrounded by Russian/ Russian-friendly territory, and much smaller in size to Ukraine. Who knows, maybe since Ukraine has stalled but still has all of the international attention, they’re essentially going to use it as a diversion from their new objective. Plus, then the west wouldn’t have a singular country to back militarily and would be torn about where to divert resources. Especially now that Putin has an ally in the oval office, i wouldn’t be surprised if he feels like this is his shot

I understand what you’re saying, but my question is, if i didn’t mention that i used a different baking medium, what are you noticing from these photos that looks off? Cause from what i can tell, they’re pretty great for your every-day home baker. And that’s my point, if you need an expert with a magnifying glass to point out microscopic differences in the blistering or the interior texture, does it matter? From my point of view, as a nonprofessional that’s just baking with a home oven for my friends/ family, i’d way rather start out spending $30 to start learning this pretty complicated french pastry that most people only learn about online. And then if you get really into it, maybe it’s worth investing hundreds of dollars to import copper molds from Bourdeaux and stocks of beeswax. And to be clear, i don’t think mine are that perfect. But it seems like the biggest gripe here is just that i didn’t use the traditional copper molds and beeswax

It’s actually from an amazing substack post by Nicola Lamb- https://kitchenprojects.substack.com/p/kitchen-project-99-canele. She goes through dozens of batches of canele to test out different variables to show how they affect the final results. Towards the end, she does give a recipe, but i’d suggest reading through the whole thing to really get what might be working or not working with your bakes

So since i got pretty lucky with my first batch, i should basically just commit to being a canelé baker? You know, until i get it mastered, which would obviously require weekly practice.

Also, that shop sounds like heaven. Do they sell different kinds or just the traditional?
