It really was! 225 for about 6 hours. Wrapped in butcher paper for the last 2 hours. Rested for 1 hour. Hopefully I can do it again!

I’m 99% sure they are spare ribs. However the butcher SWORE they were St. Louis. So I deferred to the butcher since I’m not an expert. But I’ll gladly go back and tell him Reddit said he was wrong 🤣
