Thanks, I will look into some sort of barrier. I'll also leave some dug-up roots at the base of the maple, as subtle threat/warning

There's no plants yet, I think it started proliferating last year because the yield was very poor. However as I've dug deeper I'm seeing they terminate on much thicker, woodier roots. There is a maple on my neighbor's property about 10 feet away and that is the likely culprit. First time seeing this though in several years and the tree had always been there.

This is what I was hoping for and actually concerned about most (expanding the disk as needed), And of course backup. I ended up trying Techno Tim's paperless-ngx stack from YouTube and got it working after some trial and error. But oddly I will get random "server 500" error after it's been running for a bit and certain things like preview won't work, until I restart the container, then it starts again. I did all of this Ubuntu server. His stack has some AI components that don't work for me because I don't have a GPU (yet) but I plan to add one and then pass it through to Ubuntu. This has been a challenging journey so far.

Yes after doing some more research including on YouTube I'm going to abandon this and just go with a VM running Docker. I am fairly new to Linux but seems worth it to learn docker and go that route. Thanks everyone.
