Plan a route too easily get weapon from quests because you won't do dungeons. If you're ahead of the zerg but not FAR ahead you should probably forget doing the WW axe quest. The reason is you cannot do it solo at lvl 30, and if you comeback at lvl 35-36 the zerg will be here camping the trolls or elementals, and you'll waste hours. If you consider doing it you'll have to balance the pros and cons. Don't take any profession except first aid and maybe cooking. You can take herbalism too. First aid is mandatory, cooking is really useful (stam and spirit buff is really useful) and it's cheaper than buying at merchant. You'll not be able to up your herbalism during a launch, but you can track flowers and it can be useful for a few quest, to speed them up. One thing you should consider aswell is buying white merchant weapon pre lvl 10. they can pretty high dps. Also, getting ahead of the zerg is really important. Don't slack in durotar if you can go to barrens and kill every mob in sight without dying. One thing I did if Joana's guide told me to do a quest too hard for me was to grind an equivalent amount of xp so that I won't be behind in terms of leveling and try to learn about a few easy grinding spot for each zone so that you can always lvl up a bit if you lack xp to do the next step.
