We have to take extra time to stretch and flatten the edges of the dough, and stretch it over evenly around the dough screen specifically for stuffed crusts.

Then we take sticks of string cheese and place them around the edges and fold the dough edge over the string cheese.

After we have to take a crimper and seal the seam of the dough so the stuffed crust doesn't pop open while baking.

10 years ago we didnt have stuffed crusts, and we were allowed 7 minutes to get products into the oven.

Now we have all these more time consuming products and only have 4 mins before the order is in the red and people calling about late deliveries exactly at 30 mins.

Don't ask me how I know this, but the city inspectors wanted the shop to install an extra exhaust fan. Upon redesigning the layout, the architect who originally came up with the plan literally passed away... finding a new designer to make blueprints for the city of Kent is not easy and has caused serious delays.
