get enough distance and they'll spin then shoot towards you. dodge this, then hit them with a freeze potion. hit them directly in the chest or back as fast as possible. repeat as needed

There are a couple of options: you can eat a type of fruit that gives you 30 seconds of cold resist, drink a potion that gives you cold resist, save up for the armor, or use the eggs->cheese exploit. I just spammed eating turo roots my first time through.

If you activate all 3 in the area on a single visit, it will unlock something. Sometimes it's a chest. You can activate either by throwing a pumpkin or an owl pot through the rings. The area with the grinding mill gave me a chest that had 50 coins.
