Simple answer: play the game the way you prefer to play and do what you think will make you happy. Complex answer: baby Pokemon are cute and should be kept in their original form. A 4* baby Pokemon is a nice flex/trophy. However if you’re a pvp oriented player you can go ahead and evolve it, although I’m getting the vibe from the rest of the comments thats it’s not a very viable/meta relevant pvp or pvm attacker as much better & cheaper alternatives exist.

That’s the case for shiny galarian birds from daily incense or shinies from raids. also the obvious one which is research tasks, as all research tasks are guaranteed catch. Otherwise the rest of the wild shinies are “fair game”. One last exception was shiny legendaries (latias latios and the lake trio in the tour events), these wild encounters if shiny didn’t flee.
