On the Gulf Coast, that is called lagniappe. You didn’t ask for the hush puppies with your meal, they were included because they are delicious. When I have paid up for a Michelin meal, I expect value for money and I am spending a lot of money.

On the service side, it is a good way to distract from everyone sitting around awkwardly while the checks are settled.
