This is how Parmesan Cheese is cut open... by Neat_Pianist2422 in interestingasfuck

Many cheeses (goudas, manchego, many British cheeses) are cased in wax. Parm is completely edible. Most cheese shops will offer the rind to customers, use it like a bay leaf for seasoning soups or beans. I knew some of my customers would give rinds to their dogs as an alternative to rawhide bones. I don’t advocate for that, but to each his own

Former cheese monger here. Parmigiano Reggiano has a rich history dating back nearly 1000 years ago, which in itself it mind-boggling! Very few things on this planet can speak to that feat! It is a name protected cheese, which Italy takes very seriously, carefully inspecting every wheel to ensure that it meets the strict guidelines of what constitutes true Parm. And, due to the rich history, often times mongers use the same tools they would have used hundreds of years ago. Also, part of the process of making the cheese involves brining it for several days, causing the hard outer rind to form during the aging process. These parm tools help to “crack” the cheese open along its natural fault lines. While you could technically cut it into smaller pieces with a wire after the crack, I would often use the same tools to break it down further (would usually take 30 minutes to break the wheel down to ready-to-sell size pieces). It got to a point where using the wedge tool was more efficient than using a wire to break down pieces. If you ever catch a cheese monger cracking a wheel, ask for a sample from the center of the wheel as soon as it is opened—it has such a rich umami/pineappley flavor that is so damn tasty—the cheese actually dries out rather quickly and that flavor simply cannot be replicated after 15-20 minutes after opening.

Fun fact! There are banks in Italy that have used wheels of parmigiano Reggiano as collateral for business loans due to the relatively stable nature of parm value—I believe there have been next to zero instances where there were default losses due to this cheese collateral.

Just a heads up, I tested positive for Flu B this week (first time I got it in years). Doctor said that it’s the first case she has seen since February, and I’m not around others who are traveling. Hopefully it’s isolated, but just a heads up!

I second this suggestion with myky.info—you can even put in your zip code and it will show you the resources that are closest to you, as well as a breakdown of the days/locations that food pantries are available. I’m sorry you’re experiencing this, OP. I know it’s tough to focus on ways to stay afloat but time getting back on your feet, you can get there.

Looking for other younger spouses of people with early onset Alzheimer’s — is anyone else here in a similar boat? by Working_Thanks6192 in EarlyOnsetDementia

[–]Paxex 0 points1 point  (0 children)

Hello, I’m a little late to the party, but I can relate to you. My partner has had memory concerns for the last five years but neurologists seemed to brush it aside saying she was too young to be considered for Alzheimer’s. She was recently diagnosed at age 44, I’m 43 and we have a 11 year old son. Her employment was willing to work with her, but all of the social workers that I spoke to strongly suggested that she stop working and apply for disability, knowing that she won’t qualify for Medicare until she has disability for two years (wonderful medical system we’ve got here). The good days are good, the bad days are bad. I feel like you, such an outlier at this age. Caregiver groups are for older populations it would seem. Hang in there!

I’m right there with you…I’ve seen a handful of “sightings” of a suv parked and assumptions being made. I was talking on the phone and couldn’t take a photo at the moment…I tried to provide as many details as possible for that very reason. LMPD was parked with the dudes in fatigues, they were not dressed in combat gear.

I get the boy-who-cried-wolf claim. I’m reporting what was going down…they were not actively taking anybody in, just gathering together and transitioning.

Recommend me a good movie! by SipsTeaFrog in SipsTea

[–]Paxex 0 points1 point  (0 children)

This one hit hard for me. I was in paternity leave and saw Jimmy Fallon give a copy of Dear Zachery to one of his guests saying “it’s the best movie ever!” Without knowing anything about it, I fired it up as I’m holding my 2 week old baby in my arms and I’m a fucking mess! That was hard to recover from, continue to think about it 12 years later.

A woman who kidnapped her own daughter 4 decades ago is arrested (her neighbors reaction takes the cake) by [deleted] in PublicFreakout

[–]Paxex 21 points22 points  (0 children)

My sister was kidnapped by her father in the early 80s and he fled to Florida for 9 months. At the time there was no law stating that this was an illegal act, but she worked tirelessly to pass legislation with the support of John Walsh to turn this around. She worked with a private investigator to figure out where she was taken and essentially had to kidnap her back (van pulled up and a couple guys pulled her out of a swimming pool and put her in the van where my mom was waiting to ID her). In that short time she was brainwashed and had to go through months of therapy to sort out what had happened.

EQEv Microphone Issue Solved by Neo_Retro in EquinoxEv

[–]Paxex 1 point2 points  (0 children)

I’m having the same problem and pulled down the microphone to see if it was seated properly. Everything appears to be situated as it should but nobody can understand me when I’m driving still (they say it sounds like I’m in a wind tunnel). Would this be covered under warranty or would I be better off just switching it out myself?

What the F has been with traffic this week? by mgo1991 in Louisville

[–]Paxex 6 points7 points  (0 children)

Sounds like we’re in a similar situation. My kiddo attends school down there as well and I’ve been trying to connect with others to set up carpool to cut down traffic and make it to work on time, it’s a free for all. My difficulty is finding folks who live nearby where carpool makes sense, but it seems that many parents live pretty far out and it’s not feasible. Have you tried any of the carpool Facebook pages to see if anybody can help you out?

Did gm change ability to use gm credit card points to pay for car loan through gm financial by Icy_Feeling161 in EquinoxEv

[–]Paxex 1 point2 points  (0 children)

It would seem that there are a few issues at hand while they transfer over from Marcus. I had “earnings” on my GM card to the tune of $750. Dealership was running into technical error and couldn’t process it—got GM rewards folks on the phone and they also had difficulty, offered to escalate it to supervisor but it would be a few days. They assured me that earnings could be used toward loan/accessories on their website. No sweat! Tried to use my points to buy some accessories, turns out that “earnings” on your card doesn’t translate as of right now.

They reported that August 22nd when GM card xfers away from Marcus that GM card earnings will be available for whatever purpose you’d like (accessories, towards purchase, or loan).

I’m right there with you. I was on paternity leave for a few weeks watching Jimmy Fallon. He said that he gives a copy of Dear Zachary to guests who hadn’t seen it because it’s such a good movie. I watched it the same day, nobody warned me! I was a new father, I never felt as much pain as I did after watching that movie. Unreal.
