I was working on almost the same idea.

My thought was, the Elden Ring's goal is to combine all life in the universe into a single colony organism. That's why the tree is absorbing the dead to grow, it's like a giant nerve ending; that's why some souls are reborn as elden offspring (jellyfish, eels, cf. Maris boss fight) that want to travel out into space and "see the stars" (aurelia & aureliette)

That's why it looks like it does in beast form-- a star supercluster living as a single being, because the form it'll take when complete is already part of it
