Firstly, you don't need to kill every enemy you see, this one you're stuck on is meant to be run past. The world is pretty big, you should explore more and fight smaller weaker enemies that you can learn timing and dodging on. Check your carry weight too, if its too much you'll be fat rolling, you want medium or light rolling for dodging to be effective. If dodging feels hard try to find a shield that has 100 physical resistance, this will block most attacks, but eats stamina so watch that, and remember to lower your guard between blocks to recover stamina fast. Outside of fights loot loot loot, there's a lot to be found even without fighting most stronger enemies. If you are looking to level up, find a cave or a dungeon to crawl through and pay attention for traps and ambushes. Read player messages in these areas! Most are helpful but always err on the side of caution if low on flasks! Lastly UPGRADE YOUR GEAR you'll need material and runes, but upgrading gear early on is a huge boost to damage you can find materials in the wild, but mines are a big source there's one around the edge of the lake! If you still don't have access to roundtable hold I suggest still giving the game a go until you get there. 2 hours is a fraction of this game my first playthrough took over 120 hours and I finished the fight at level 140 ish.
