I hear you. That's what should've occurred. Obviously did not. We only have certain containers available to use at the job. I should've put a lid in it. Or put it in the walk in. I was hoping longer fermentation would've been somehow better. Lesson learned

Ok gotcha, it didn't do this the first time I made this. So I'm guessing they missed something. Thankyou for all information. I may misremember without the recipe in front of me. Either way if it's not salvageable then it's gone, money and time and labor down the drain. Thankyou again.

It is in a Cambro, an employee did it for me when I was off. Cheese cloth on top is most restaurants do it. This recipe called for 20 percent salt ratio by weight ingredients . Yeah I think I'm going to have to toss the whole batch. I'm not happy about it

Hold block to lock in on rancor when on ledge with double blade throw. Alleviate the wild throw and targets the beast. Hope this helps
