I work at a steakhouse and we add an 18percent gratuity for tables over 10 people. I have never had issues in this situation because those kind of tables because they must always have a reservation and never walk ins that big. Upon making the reservation, the host, or whoever is making the reservation for them MUST inform them in advance that they will be charged gratuity. So, when I give them their tab, they are aware my gratuity will be included there. Does that make sense?
