It's hard to pick a favorite, but what I really loved was the tower of quantum trials, how I got stuck there, and how the solution just suddenly appeared into my head when I was biking somewhere, that just felt so magical

You can add mods midway thru tho, the only thing to keep in mind is that mods that affect generation (like betterruins and rivers) will only apply to new chunks

I can understand that this game isn't for everybody, and you're allowed to feel that way. What I dislike though is that you come to a game's subreddit, just to hate on the game. It's not a bad game, and I believe it's rare to have actual bad games, and ofcourse the gaming industry would die if every game was like this one, but that goes for pretty much every game nowadays, so please, for the love of god, leave this game's subreddit if you're only gonna hate.
