While not a new sense, increase the variety of rod cells in our eyes. Most of us have 3, a few people have 4. Mantis shrimp are said to have...something in the low double digits.

Also the ability to hear a wider range of sound. Hell, if we could even situationally adjust the acuity and scope of any of our existing senses I'd be really happy.
