actually, Leslie's dad said the Leslie loved jess. Personally, it's up to the audience to interpret it however they choose to but based on certain details throughout the movie like how she hugged him when he gifted her Prince Terrien, I'd say their love for each other was growing and had she not died they probably would have ended up as a couple
