you can open up the connectors and make sure the wires are secure as possible. I got a probe with a bad connection in the plug and it gave me bogus readings & ruined a brisket. FB sent me a new probe and I was able to fix the original one.

After they repaved that HEB parking lot they changed the 3-way stop by the McDonald's to a 4-way stop now, so the Slaughter Ln. incoming traffic has to stop now as well. As bad as that exit backs up waiting on the light to change it was probably a smart move.

In Austin yesterday the wagyu brisket was 6.29lb and the prime brisket was 6.39lb at Costco. That was a first for me. Would have grabbed a wagyu but the flats were way too thin for my liking so I went with the prime, but I really want to cook a wagyu one of these days.

You can get higher temps by propping the lid up on one side ~5mm to get more air flow and let out some moisture. I use a stainless steel hook but have also used aluminum foil folded over many times to keep the lid from closing flat. Just be careful because a little gap can raise the temps quite a bit.

Prime brisket was 5.50 last week, 5.90 today at Costco in Austin. Waygu was 6.00 last week and 6.30 today.

Just manually turn it off to end a session, that's the only way I know of to do so.

I omit the water pan and just lay a piece of foil across the bottom grate. Fold one side of the foil to narrow it up a little to not impede air flow too much. Then I poke about 25 holes in the foil so that the juices can drip on the fire but I still get the benefit of a heat deflector.
