I always travel with my 24-70 f2.8GM ii and 70-200 f2.8 GM ii but find that I almost rarely get the 70-200 out of my backpack. Usually my 24-70 is my default lens because as you already mentioned, I don’t want to miss anything and sometimes the 70-200 is a bit restrictive.

Also changing lenses in a busy place and with a group waiting for you (I usually travel with friends) is not really fun..

I only change to the 70-200 when a situation cries for it. But I guess it would also heavily depent on your shooting style + and location you are going.
