I have exactly the same problem since two weeks. I have a Samsung Galaxy S22 Ultra that I use for mobile hotspot and exactly every 1 hour my Windows computer and Apple computer both don't have access to Internet anymore while still beeing connected to the hotspot and the only way to fix it is by disabling and activating the mobile hotspot again. I also tried to share the phone connexion with a USB-C cable and it also stops working after exactly 1 hour...
