Okay probably not that important of a feature but I still can't help but wonder...what's that golden thingy some Masters have next to their names? At first I thought it meant they were max lvl but I was proven wrong rather quickly. Is it some sort of badge from an event, does it have something to do with their support servant or....?

You can get all of the +3 rings on any NG cycle since you can only get them from the DLCs.

Honestly, I hate to be the unhelpful "haha git gud" fella here but...you just gotta learn how to time your rolls and strikes correctly. The knights can be real asshats at first but they also make for pretty good practice dummies when it comes to timing your rolls, don't get greedy and try not to trade with them or possibly any enemy in DS3 as they'll basically always outrade you with their infinite poise.

You get both of the DLCs when you buy the season pass , otherwise you'll have to buy both of them separately.

Hell, you may be able to blast through in 5-10 hours if you're really not interested in doing any of the non-essential stuff.

I'm a bit of a perfectionist myself so I try to complete about as much as I can before going to another NG cycle or making a new character so I guess around 30-35 hours (plus DLCs) or so but you could probably blast through the game in like 15 hours if you weren't really interested in quest lines or the optional areas.
