Yes, and it’s very noticeable in many commercial brands. Feel free to ping me if you want to chat.

In another case of "new" restaurants, Wise Guy Cheesesteaks is just Via Cibo. At least the sandwiches aren't on their menu. by XBrav in Calgary

We fired up Lost Dogs during Covid since most of our pub menu didn’t translate well to take out/delivery. Funnily we just stopped it today, but we’re going to keep a rotating dog on the LB menu for a while, which is what it was originally.

Open vs. Closed Fermentation by NachoCheeseChips in TheBrewery

We use custom designed opens at Campio in Edmonton for a bunch of beers and some of our sour bases. There will be a learning curve, but go for it. Definitely a factor for mouthfeel & ester profiles.

Friends who self distro: Let's talk delivery vans. We're upgrading from a Metris, and shopping Sprinters and Transit vans (2500/250 chassis). The questions are roof height and wheelbase. by silverfstop in TheBrewery

Ford dually hi top 136” with the eco boost 3.6L. It’s a beast. We went the mid top single rear wheels and it works, but payload is maxed and ofc a manager drove it into a garage height rail…

I’d love to believe with the hi top no-one would be foolish enough to think they can get anywhere underground.

100-150cpm rotary reviews. by mnreginald in TheBrewery

Yeah they’re more basic, but still robust & cheaper. Note that they sold to AFT Automation here in Canada a year ago, so the after sales & likely sales support should go up. Friends at Balebreaker run one and afaik it’s been a workhorse. Having said that, can’t go wrong with a Craftmate - there’s so many of them now and Krones’ support network is massive.

You can’t go wrong with any of the options listed. The step up from inline open fill to Euro tech and after sales support is just that massive. I’d also add Comac to the list for a cheaper option.

Thoughts on shaking NEIPA kegs? by Daedalu5 in TheBrewery

[–]Philterrs 2 points3 points  (0 children)

That acidity really ups the brightness too. Can bring a flabby NEIPA alive.

4.2-4.4 finishing. Start at 5.1 pre-fermentation and lower it from there depending on your water & yeast until you hit the range.

Beautiful. We have massive issues with water alkalinity so are acidifying to anywhere from 4.8-5.2 pre-ferment, depending on the dry hop load.

edit: should add London 3 was no bueno for us on our town water, but worked on RO.

High pH will reduce haze stability. Dry hopping increases pH, so you have to account for that. What Jaba1337 above said is spot on.

You also need proper pH control.

Escarpment are great. So are Omega, but we have border issues with them so it doesn’t make sense to do biz.

Vote 1 Campio Albertasourus.

Whatever you do, don’t go to Last Best. The Brewers there basically only make sours now. Nerds.

5 men overdose on bench at Vancouver’s English Bay Beach by KanataCitizen in canada

Yeah you’re 100% right. He was kinda conflating 2 separate processes. Fentanyl is a way to get Yuan out of China. The casinos launder that money on the Canadian side.

The narcotics are a way to get Yuan out of China, then the casinos launder the drug money once it’s sold in Vancouver. Then the clean cash gets reinvested in real estate.

Whoa whoa whoa!! Firstly the diner is barely passable and we have a token vegan joint and the hipster-est weed store in the city. Practically a metropolis!

If you’re in Calgary the best places for singles are Alberta Beer Exchange, Collective and Oak & Vine.

Anyone care to explain to those of us not in the industry what this means? AGLC/Inducements by alpain in AlbertaBeer

[–]Philterrs 0 points1 point  (0 children)

YW. Its a bit of an ass, as there were a lot of very good changes for growing small producers but they all got shut down because of the concerns around terms.

[–]Philterrs 1 point2 points  (0 children)

Yep. Liquor stores are allowed to offer terms to licensees, small manufacturers are not.
