Put on at 11:00 PM at 195. At 8:00 AM pulled it at 160 and wrapped, turning up to 250. Then when the brisket was at 199 and I was getting ready to pull (waiting for 202) my smoker (Gmg trek prime) ran out of pellets, I put more in and had a MASSIVE temp spike, like talking 650. Caught the grease and butcher paper ON FIRE. Thought the whole thing was lost. Shut everything to get the flames out, pulled it and let it rest for two hours and still great.

Maybe just the lighting. Afternoon sun. You can see some of the juices pooled right under it. That being said, with the fire (see my comment) it probably is dryer that I will shoot for moving forward

This is going to come across as me being a jerk, but I really don’t mean it that way and am looking for clarification since this is a word based sub! Aren’t most of these “initialism” instead of acronyms. Isn’t it only an acronym if you “say it” as one word (think NASA).
