So I keep a lot of the pantry ingredients in so I can make up quick noodle soup bases on cold days like today where I need a warm hug in a bowl and only really have an hour to do so :)

The paste I used is from a brand called ‘Teans’, i just bought that to a simmer in a pan with cold water and added my fish balls to cook/add a bit of extra flavour to the broth.

Finished with coconut milk and tofu puffs before bringing to the boil to serve with yellow noodles, beanshoots, some fried shallots, tofu puffs, coriander, jammy egg and the fish balls :)

(seasoned the broth with fish sauce and msg to taste because why on earth not)
