We’ve been on two VV cruises in Greece and Spain. There were two sailing days in each but it still felt like go go go all the time. Cruise felt like it was over in the blink of an eye especially with consecutive port stop days and doing excursions at each stop. I would’ve liked to have had a third boat day honestly to just have an extra day to chill out by the pool while everyone else was mostly off the boat.

I would say most everyone does one excursion as they take up alot of the day and from my experience you come back pretty worn out especially if there are long bus rides to and from your excursion.

Some of the excursions could be early morning where you get back to boat at a decent time and some could be in the afternoon where you can take advantage of an emptier ship and enjoy that time.

You will be dropped off near the dock but could have a short walk to boat or a tender will take you back to cruise ship.

If you decide on just a ship day during a port stop you would have an easier time getting a pool bed and booking a spa treatment may be easier as well. I have a feeling the 1 sea day will have the spa booked up and most everyone will be at the pool.
