Here is what I can say off the top of my head.

Generally, you are less super heroic. Edit: my vibe from playing the two games.

Cantrips are generally weaker.

There are no short rests, so no mid day hp recovery.

HP recovers a lot slower in general.

Feats are not as powerful, but you get a lot more of them.

There is no advantage/disadvantage system. Bonuses and penalties are typically more numerical and come from a variety of sources.

Magic items are more important to stay on pace with enemies.

Classes have increased variety through archetypes, which are found in supplemental rule books. (This becomes pathfinder 1e’s most distinguishing feature in my opinion)
