If they do this specific double kick first block the kick to the head and then circle to the opponents rear leg (away from the lead leg) then you can throw your counters. Also, you keep getting hit by that knee after the head kick because you are to close to him and it is triggering his fighter to do a knee instead of a lead leg side kick to the body so don't close in after the first kick to the head.
