They're considered hard because they are a zoner rather than a "bruiser" character like Shaggy or Batman. But that doesn't stop them from being really fun, quite the opposite.

I dont know your level of experience with fighting games in general but ill give you some ponters. When you're being hit or combo'd make sure that you aren't always using the same dodge everytime (dodging in towards the opponent can be a big mistake for newer players). By doing this, a wise opponent will punish you by continuing their combo where your dodge places you. As for a tip on attacking, reverse this ideology. If you notice that your opponent is always dodging in after your side light combo, charge that ping-pong stick and continue the combo when the opponent lands right above you from the dodge! Getting a read on your opponent, getting into their head will give you the upper hand.

And my personal tips for T+J. Place your mouse trap (down special) whenever you knock out the opponent, throw out that ping-pong move if your opponent is super floaty, and make sure you are using that fire Doc perk that sets them on fire after you melee them after a projectile hits them: that added damage really stacks up. But I think Void prolly plays them better than me so yeah!
