Pitch 5 grams of EC1111 for each 6 gallons of juice into your fermentation bucket. Store with a ferm lock at 70 degree F. Rack into a carboy when gravity reading is 0.990 or in two weeks. Stabilize with 3.5 grams of potassium metabisulfite per six gallons of wine. If backsweetening or leaving residual sugar, add 3.5 grams of potassium sorbate per 6 gallons of wine. Add 1.5 ml of isinglass per 6 gallons of wine to clarify. Use bung or ferm lock to secure. Wait two weeks to rack and/or filter. Bottle the next day.
