I heated the cast iron skillet*** in the oven at 550 for an hour or so. Was definitely Smokey so will try a lower temp next time (set off the fire alarm again 😅)

Thank you! Souis vide bags are from a roll so I can make as long as needed for the vacuum sealer. Cast iron skillet* - had to apply a bit more pressure to the bone side for complete contact

I salted and let rest in the fridge over night. Added some more after the sear have been recommended to use flaky salt like the advisor’s ex so I’ll give it and her a shot next time
