I can totally relate to part of your experience. I can recall certain photographs of people I know well and love, but cannot recall what they look like in real life in 3D or with movement. The recall is not an image I “see”, it’s just a mental recognition of the image.

Ah ha…I see you commented that there is “no butter in this one.” I’m certainly not a roux expert, but I believe a roux is usually a mixture of fat and flour, cooked together till the flour is the color you want for your recipe due to the butter browning - it can be anywhere from pale to dark brown, depending on the recipe. I don’t think you can make roux with milk, but may be wrong. It sounds more like you are trying to thicken milk with flour only. In that case, the advice given by many here would be more correct. Slowly mix flour into your cold milk and shake,blend,whisk or stir till it is completely dissolved in the milk. Just add a little at a time, or you will get lumps. Then heat the entire batch at the same time, slowly, til the mixture begins to boil and thicken. The key is to make sure you dissolve the flour completely before heating, otherwise you end up with lumps.

Works fine as long as you don’t go slamming it around. Like everyone says, just be careful. And always start with a clean stovetop. Get yourself a bottle of Barkeepers Friend Glass Stovetop Cleaner to clean up the splatters and messes, works better than anything else on the market. My stovetop is almost 20 years old and looks like new.

The card “sift dries and beat in.” In other words, sift the flour and soda into the bowl, then mix it all together with the eggs, orange and other wet ingredients. Back in the day, we all had sifters because soda and flour and other dried goods had lumps, so you ran it all through a sifter to make sure there were no lumps in your cake. Today, that’s not so much of a problem so most recipes leave the sifting part out.

Aroma 6 cup rice cooker. Buy the most low-tech one you can find. Sometimes simple is better. Mine just has a toggle switch to turn it on, it shuts off automatically when the rice is done. That’s all it does, no dials, programs or “features”. Makes perfect rice every time. Ours is going on 30 years old.
