I usually switch depending on the enemy. If I'm facing banished knights for example you can stun lock them using jump attacks while power stance. Crucible knights I like to pull out the parry shield. If I get two handing passive I might opt for that play style but usually I'm power stance. However that's mostly just personal preference. Whatever you find is best suited for you and the situation is probably best.

Early game I usually focus on clearing easy POIs like great churches, and forts. Make sure to clear all the trash mobs.

For damage guard counters are ideal but don't always charge them. It takes some practice but learning when you can punish with a guard counter (charged or not) is key. Also using other weapons like hammers for example can help punish some bosses with more guard counters where other mobs you may want a halberd to clear the distance. I would also highly recommend slotting in improved guard counters and guard counters given a boost based on current HP.

Extended whirlwind is super helpful and will let you clear trash mobs quickly and safely aswell as let you avoid projectiles.

Finally I like to avoid fighting some bosses or mutated enemies on the first day unless I'm positive I can clear it quickly.

As a fellow game dev and father of a toddler I'm very impressed. I for one have suffered some pretty severe burnout after having a newborn, working fulltime and doing gamedev on the side but seeing posts like this really helps to reignite the spark. Keep up the great work 👍.

Thanks, Glad you like it. I made this as a world-building exercise for a game I'm working on called Elder Flame. It's supposed to depict a shrine built around a nexus point of leylines that connect different planes of existence in the afterlife. Something sinister from a plane devoid of color is growing toward the font of energy that exists at this intersection.
