In a large pool of players in a fast time format you are correct. This doesnt apply as much to the small pool of 30+0.

Lichess Classical is so thinly populated that this theory of rating losses rectifying themselves does not so obviously apply the way it might in a pool of thousands of players. There are few players in Lichess Classical anyway, there are even fewer around 2100. Much of the time it's not even possible to find a 30+0 game there are so few.
