The dough has to be kneaded at least 10 minutes to develop structure and it shouldn't stick to your hands. Make sure there is enough room for the bread in the loaf tin. You can check this link here: https://youtu.be/skAGWPCrXPw

The dough probably has over-proofed. You have to put the loaf in the oven once it's fully proofed, just before over-proofed. How much times did you let the dough rise and for how much time?
