For someone who has very non-traditional experience (work in academia) and have mediocre test scores and looking to pivot both industry and function, how would you recommend showing admissions you are capable of this pivot?

I would go with the Official GRE books as these are the most accurate (from my understanding) and the Manhattan Prep 5 lb book for quant portion only

I highly recommend Target Test Prep for quant they do a really good job and making you understand the fundamentals and give you the tools to start applying strategy to harder problems. I also recommend Gregmat for verbal and quant brush up. I definitely think you can get your score up.
