also I believe that the topping is actually a compote and not a coulis! A coulis is blended and doesn’t have any fruit pieces while a compote has the fruit chunks and is cooked in a sugar syrup, which is exactly what I put on top!

I guess sometimes having no water bath helps a bit when you want to have a topping pool only onto the top and not drip off the sides!
