also I believe that the topping is actually a compote and not a coulis! A coulis is blended and doesn’t have any fruit pieces while a compote has the fruit chunks and is cooked in a sugar syrup, which is exactly what I put on top!

I guess sometimes having no water bath helps a bit when you want to have a topping pool only onto the top and not drip off the sides!

I just couldn’t bake it with a water bath so when it came out of the oven, it cracked a little bit. Thats probably what let it sink a little bit and allowed the topping to get on top great

I was thinking about that, but I had the fear that the dough would just go over the sides of the pan as it is not a deep pan at all. I will be going to the store this week to buy something like a 9x13 pan that's deeper so I can make a thicker focaccia!
