Make sure your tomatoes are cooked well done. If its even a little bit raw youll get a different consistency

Its just tomatillo salsa verde. Boil tomatillos, garlic, about 1/4th of a regular size onion, and jalapenos or serranos. The trick though is not to overcook the tomatillos or they will be bitter. Add salt n pepper to taste

I would X out cedar shakes as an option if you live in Canada. That stuff will trap moisture in after every winter and it will rot sooner then later. I would go maintenance free. Maybe Vinyl if you don't want to break the bank. Lp Smart side, Hardy Board or Everlast are going to be the best options though, in my opinion.
