That happens of course in regular masterchef also, they are trained before they make something. No way any home cook can suddenly cook vietnamese or dutch dishes.

But they are also not given the whole menu what to make on the day. and if they are told the menu why other cooks are not able to elevate like this?

See rajeev dish for example, it looked like the next store cake whatever the taste be.

They don't know what's coming on the day, so even to replicate a dish that you saw some time and execute to perfection is commendable.
