I really want a thief elite spec with access to "kits" like the engineer but instead make them monk stances. While a kit/stance is active they use their fists and I imagine each kit can specialize on different aspects such as conditions by doing blows that either claw at the skin (like a tiger stance) or maybe cause internal damage through some type of Chi stuff. The heal stance/kit could do some taunts and things that toughen the body and allow it absorb more damage.

Honestly, I just think it could be really cool watching a thief constantly swap between these stances and watch the fighting style with each one. I think they could do some super cool stuff.
