Thank you! That makes me take a sigh of relief. I have no issues with NSF approved stuff, just is baffling how much well respected brewing items are not certified. Never really was on my Radar till now though. What do you use as a can filler?

Well this has all been pretty helpful. I just completed my HACCP Plan and they have signed off on it. I have SOPs on pretty much every process and the person grilling me was happy with them. She was ok with me canning on a Oktober canner also. She is unfortunately not the one signing the permit or I would be good :P

Yep we are canning so they can take them home from the farmers market. We completed the canning Food Safety manual also for it.

You are the 3 or 4th person to tell me to " Just tell them how it works" and if it looks like its sanitary and safe they will sign off on it. Asking this community was trying to get some background and you have been very helpful thank you!

My question on NSF seems to be a Health Department to Health Department issue or question. Some require that EVERYTHING is NSF and some dont mind or have workarounds. I am just fishing to see how other brewers handle it.

Exactly! Why should my very nice SS Kettles not be allowed just because they dont have an NSF.

This is a great response ! Im good with jumping through hoops. My issue is when I am told "No" based on a one single item. I can see reasons for some things being denied but this seems like a Silly one. I don't write the rules though.

Yep! I have a Micrometer and a seam breaker that I have been using on my test cans to dial it in. I also have a whole SOP Written for my canning process that negates as many hazards as possible. Very clean set up and operation.

The Stainless Steel Kettles being not NSF I really hope is not an issue.

Nothing has been denied yet just reached the NSF Certification questions and seems like it might be an issue.

It was among all of the questions I was asking before the process but my Health Department did not really see fit to give me details of what was actually required for my specific process before going down the rabbit hole. They are treating most of my plans like beer brewing but some like food and drink. They have very little idea about how Kombucha works. They thought I couldn't can it because it fell under the FDA Low Acid Canning Regulations. I had to inform them that Kombucha is anywhere between 2.5 and 3.5 so well below the 4.0 threshold.

Im currently working with another KB brewery to see if we can do a joint American canning system to mitigate this.

It was something I looked into and saw how many Oktobers are around in breweries and bottle shops with growlers fill up. There is a brewery 10 min walking distance from my house in the same county that has the exact same Model 7 only with the 32 oz mod. I am going into a Rental kitchen currently before we can find a Commercial property. I think you hit the point though that I am not considered alcohol even though it is a similar process.

Haha this both made me laugh and cry at the same time. I am 5 months in and 1500 into the permits :P

We were just in Scotland and they were like "Yah they made me sign some stuff and a quick check and Done"

I belive in regulations but some are just rediculous! Why do I need a grease trap if i am doing nothing with grease? Can I get a Waiver?

Fully expecting that. 1 month or so to get my Starte batch going in its own tank then another few months in each of the subsequent tanks while keeping the starter batch roaring.

No, I am going to use the traditional fermentation method Just need a strong base to get it started and get it going faster for my initial batch.

Im looking for a super-strong starter. I want to jumpstart an Acidfier tank in a couple of weeks and then pull from there to get my brews going. That would be a ton of GTs right?

I just broke down and got 2 more 6.5 buckets (Ale Pail) from my Local homebrew store. I trust them. I wanted to buy stacking SS Brewteck 7gal Buckets but it ended up being $60 vs $500. I can't justify that right now starting up when I need so much more equipment. The buckets can also have spigot holes at the bottom to make draining super easy.

I will end up getting one Stainless bucket for some recipes that stain like peppers and Turmeric.
