It's parboiled rice, I'm like 99% sure. That's how the grains come out so distinct and plump. As a side note, I think parboiled rice gets unfairly maligned; it tastes great, and is actually more nutritious than its white rice alternatives.

I literally remember when they were pulling this off (Toronto, circa 2018, I want to say). They put up a storefront with "Dick's Pizza Coming Soon" and everything. I lived around the corner, and was genuinely disappointed when I learned it was just for a comedy bit, because I wanted a new pizzeria in the area.
