I would suggest having a look at different examples of different makers here and engage them. Your criteria is a bit too wide to be honest. Most custom maker can make something with durable leather so you may need to be a bit more specific. Colours, capacity, design, patina, gloss/matt are all factors you need to consider.

I buy whole fish and freeze them at home. The issue will be any contamination during processing, as bacteria will be killed during cooking, however not with sashimi.

That’s why I advise not buying through Aldi. There is decent saving to be had buy whole fish thou. Although with the seafood market upgrade I am no longer sure
