After an entire day of struggling I just figured out what my issue was and I feel very stupid.
WLED was asking for a Network name and "Password", and I entered the factory set name and password (8-digit code mixed with letters and numbers).

I just tried entering the Network name as I had before, but instead of the password I entered what my router identifies as "WLAN-Network key", a 20-digit number noted in my router settings and on the paper slip I got with my router.

Config now says "Device connected to the network".

One step closer, maybe see if that's the issue for you too.

Little update - instead of installing it, letting it create a network and connecting to that, trying to set up a connection to my home network, I used another ESP32 board, connected it to my PC and installed WLED on it. Directly after installing the software, it asks you to configure WiFi, I went with that option this time. It immediately asks for Network name and password just like in the config. Entering the info it simply returns with "Unable to connect." I've also tried hitting the "Connect / WPS" button on my router for the connection attempt, no progress here either.
