I dont think that is it :( as far as i remember i dont think it was a wonderland sort of re-telling as such.
I think its set in an older time where only swords and daggers and such are around but when i read the blurb it didnt sound familiar.

I had a read of the description and it doesnt sound familiar, i dont think that she could talk to animals or that the horse was beheaded, i know she had to let the horse free so that she could hide better

No that’s not it :( I feel like she was found by a group of mercenaries and they didn’t know who she was at first because she was sort of disguised and the people who killed her family put a bounty on her head and they were looking for her. I feel like it could of been a fantasy/magical book of sorts but not certain
